What’s for dinner tonight? Mediterranean Chicken Pasta #Schwartz2in1

I’m always looking for new ideas on what I can make for dinner, I tend to stick to the same recipes and well it can get a little samey. So when I saw that Britmums had joined together with Schwartz and that they were looking for bloggers to taste test the new Schwartz 2in1 range I applied hoping that I would be inspired to make some new delicious recipes.

Luckily I was selected and was given two packets from the Schwartz 2in1 range to try:

  • Mediterranean Chicken Pasta and Cheesy Crumb Topping: A blend of herbs and spices for chicken pasta with a cheesy topping
  • Garlic & Thyme Roast Chicken + Crispy Roast Potatoes: Roast chicken seasoning, with garlic and thyme, accompanied by a special seasoning to create perfect Crispy Roast Potatoes

I decided to make the Mediterranean Chicken Pasta and Cheesy Crumb Topping first as I really need to learn some quick but tasty pasta recipes.

How to make Mediterranean Chicken Pasta

  • 1 sachet Schwartz 2 in 1 Mediterranean Chicken Pasta and Cheesy Crumb Topping Recipe Mizes
  • 1tbs oil
  • 450g (1lb) boneless, skinless chicken breasts, sliced – I opted to use Turkey
  • 1 yellow pepper, chopped – I omitted this as we are not keen on peppers
  • 150ml (5fl oz) water
  • 400g tin chopped tomatoes
  • 200g (7oz) pasta, cooked and drained
  • 75g (3oz) Cheddar cheese, grated – I used 100g, as we are a cheesy family


  1. Pre-heat grill to a medium heat – Our grill doesn’t work so I pre-heated oven instead
  2. Heat oil and fry meat for 6-7 minutes, until browned. Add yellow pepper (if desired) and cook for a further 2 minutes
  3. Mix Mediterranean Chicken Pasta Recipe Mix with water and add to the pan with the tomatoes. Bring to a simmer then stir in the pasta and heat through for 1-2 mins
  4. Transfer to a baking dish and sprinkle with the Garlic & herb Crumb Topping, then the cheese
  5. Place under the grill for 4-5 minutes until golden – I popped it in the oven for the same length of time and the cheese had melted and started to go golden brown

Tasty alternative?

Try replacing the sliced chicken and pepper with 180g tin tune, drained and 200g tin sweetcorn, drained. Skip step 2 of directions and add to the pan with the pasta then follow the remaining instructions.

Boo Roo and Tigger Too’s thoughts…

At first glance I thought that this would take longer as the directions as you to add cooked, drained pasta. By starting the pasta whilst I was grating the cheese and getting the baking dish ready it was already starting to boil by the time I had placed the turkey in the pan to start frying. Following the instructions and adding the ingredients was straightforward and the smell was just delicious.

As our grill doesn’t work I did worry where placing it in the oven for the same amount of time would work. Surprisingly it did and didn’t dry out the pasta or sauce.

Serving it up to Mr Boo who commented about how lovely it smelled had a sneaky mouthful before even sitting down to eat. ‘This is one of the best meals you have ever cooked!‘ he said as he took his seat… Yes! brownie points to me! I’ll have to make this more often.
