Slimming World Pulled Pork recipe

Food shopping is one of those love it or hate it jobs, personally I quite like wandering up and down the aisles… that is if I don’t have the children with me. When they were little I could just about cope with doing the weekly shop with them but know they are either tired from school or would rather be doing something better with their Saturday mornings than trudging around a supermarket.

When I think back to my childhood I can remember going food shopping with my Mam and sister (she was a single parent so didn’t have many options not to take us), I enjoyed going shopping even then. Every month or so we would make the trip across to the other side of the city to go to Morrisons on the bus. I’d ask my Mam why we were going ‘all the way over there’ for and she would say that they have the best meat selection plus I’ll treat you to one of their yummy cakes. With that, my eyes would glaze over and I’d be thinking about which fabulous cream cake I wanted from their bakery counter, should I get a choux bun? or maybe a Bakewell tart? Such a difficult decision for a 5-year-old.

Fast forward a few years it is now my turn to head over to Morrisons, however this time I am going armed with a bank holiday BBQ shopping list instead of wondering which type of cake I should get. My local Morrisons is a fairly small store compared to the larger sites that Morrisons now occupy, in some ways I feel we are missing out on the larger selection of food but in others, it still has that local store feel to it (if you know what I mean). Shopping first thing on a Saturday morning I was treated to not only the best selection of fresh fruit and vegetables but the delicious smell of fresh bread and pastries from the bakery (so hard to resist when you are eating healthier).

As I was planning a barbecue for bank holiday Monday (weather permitting) I wanted to get a good selection of meat. This is the part where I confess that I am usually the person who just goes down the meat aisle and grabs the same meat week in, week out. However Morrisons is a little different, they have the usual 3 for £10 offers on which I, of course, I grabbed 6 different bits from bacon, gammon, pork loins, extra lean mince, sizzling beef slices and peppered grillsteaks. I walked up and down the aisle looking for a pork joint so I could make Mr Boo’s favourite pulled pork but it wasn’t immediately obvious so I did what I never did and looked at the butcher’s counter. I’m so pleased I did as they had boneless pork loin on offer at half price so managed to get a 2kg joint for a little over £5.00!


After making sure I had all the salad, drinks and snacks we would also need I headed off to the checkout. Considering I had purchased quite a lot of meat I was surprised that I’d only spent £74.58! Amazing value!

With my shopping trip a success I opted to try and make a couple of BBQ foods in advance, just in case the weather didn’t play ball. Mr Boo loves pulled pork however as I am following the Slimming World lifestyle I wanted to try and make it a little healthier so that we can enjoy the food without worrying. So let me share with you my Slimming World Pulled Pork recipe (slow cooker version)…

Slimming World Pulled Pork recipe (slow cooker version)

Enjoy the delicious taste of barbecued pulled pork but with a homemade slimming world friendly sauce.

  1. 3lb-4lb pork shoulder (trimmed well of all fat)
For the sauce
  1. 5 tbsp Worcestershire sauce
  2. 1 tsp mustard powder
  3. 500g passata
  4. 3 tbsp balsamic vinegar
  5. 2 cloves garlic (crushed)
  6. 3 tbsp sweetener like Splenda
  7. 1/2 tsp each of salt and pepper
  1. Place all the sauce ingredients in a small saucepan and whisk together, bring to the boil then simmer while whisking for about 15 minutes until thicker
  2. Taste for seasoning might need a little more salt or pepper
  3. Place pork into a slow cooker and pour over the sauce and cook on low for 6-8 hours
  4. After this time remove the lid from the slow cooker and turn it up to high for an hour to help to reduce the sauce
  5. Remove the joint from the slow cooker and using two forks to pull the meat apart into shreds
  6. Place meat either back into the slow cooker pot or a serving dish and mix well into the sauce
  1. Serve with fresh salad and crispy rolls

    I would have never thought to go to the butchers but definitely will be checking it out from now on!
    We don’t usually buy pork- not really sure why- might just take the leap with this recipe!

    Looks yummy. I bought a shoulder of pork when we went to Morrison’s last weekend. It’s in the freezer now waiting for a Sunday lunch. This looks perfect.

    great been looking for a slimming world pork recipe for a while now, have lost 1st 10 lb so far and still a long way to go….. yummy food like this always helps though xx
